  • 1 medium potato
  • 2 carrots
  • 1 onion
  • 250ml water
  • stock cube - vegetable
  • 25g margarine or 1 tbsp oil
  • mixed herbs (bouquet garni)
  • salt and peper
  • 1 leaf of corriander


    1. Prepare the vegetables so that they are in good size chunks which aren't too big
    2. Pour water into a jug and add stock cube. Stir well
    3. Melt the fat in a saucepan over a low-medium heat
    4. Add diced vegetables to pan and stir with a wooden spoon for 2 minutes
    5. Add salt, pepper, mixed herbs and corriander to the pan.
    6. Stir in stock and bring to a boil. When it is brought to a boil, simmer for 15 minutes or until the vegetables are soft
    7. Blend if you wish to make the right texture and consistency that you wish

Hi, I made this for supper tonight for myself and the mini peeps. I adjusted the recipe slightly.... 1 tbl spoon of ground corriander. 2 large potatoes. 8 carrots 1 onion 2pints of water. Fresh corriander and knorr veg stock pots. Took 20mins to simmer on medium heat in a huge pan with lid. Salt, tobasco and pepper added to taste.
