Sliced aubergine deep fried in a spicy gram flour batter

  • vegetable oil or corn oil
  • 1 large aubergine
  • 1 heaped cup of gram flour
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1tsp garam masala


    1. Put oil on to heat first
    2. In a bowl, sift the gram flour
    3. Add the red chilli powder, cumin, salt and garam masala. Mix well
    4. Add enough water to make the batter a medium consistency
    5. Wash the aubergine, top and tail, slice thinly
    6. Dip each slice into batter, so it is coated evenly, then place carefully into the oil. Cook until golden brown.
    7. Serve with mint youghurt
    8. This snack can be eaten on its own or served with biryani :)

I love aubergine and this this recipe is perfect for a change. The first time I cooked it I didn't have gram flour so used self raising instead but I tried it again with gram and it is definitely worth the effort. Beautiful
