For the cake:
225g self raising flour
1 tsp baking powder
225g golden caster sugar
225g olive oil
2 large eggs
2 tbsp strong coffee
75ml milk
For the filling:
225g self raising flour
1 tsp baking powder
225g golden caster sugar
225g olive oil

2 tbsp strong coffee

100g softened butter
100g golden caster sugar
250g mascarpone
12 walnut halves
1 tsp vanilla extract
3 tsp strong coffee
Method
STEP 1
Preheat oven to 170’C. Line two 20cm cake tins.
STEP 2
Whisk together the eggs, olive oil, coffee, milk and sugar. Gently mix in the flour and baking powder. Divide the mixture evenly between the cake tins. Bake for 25-30 mins.
STEP 3
To make the filling, whisk together the butter and sugar. Add the mascarpone, coffee and vanilla extract. Whisk until completely combined. Spread half the cream in between the sponges, and half the cream on top of the cake. Arrange the walnut halves on top of the cake.
