Spicy Chorizo Rice

Ingredients
- 150g Brown Rice
- 30g Green lentils
- Handful of sliced chorizo
- Handful of cubed pancetta
- 1 Red pepper, chopped
- 1 chilli, into half circles
- 1 medium onion, diced
- 2 garlic cloves, sliced
- 800ml Chicken Stock
Method
- STEP 1In a large saucepan, fry the onions until soft and add the garlic
- STEP 2Add the chorizo, pancetta, red pepper, and chilli. Leave out the chilli if spice isn't your thing. Fry until the pepper softens.
- STEP 3Add the rice and the lentils and pour the stock over. Give it a good stir!
- STEP 4Bring up to the boil and then simmer for 25 minutes. Add extra water if it gets a bit dry.
- STEP 5Enjoy!
