  • 150g Brown Rice
  • 30g Green lentils
  • Handful of sliced chorizo
  • Handful of cubed pancetta
  • 1 Red pepper, chopped
  • 1 chilli, into half circles
  • 1 medium onion, diced
  • 2 garlic cloves, sliced
  • 800ml Chicken Stock


  1. In a large saucepan, fry the onions until soft and add the garlic

  2. Add the chorizo, pancetta, red pepper, and chilli. Leave out the chilli if spice isn't your thing. Fry until the pepper softens.

  3. Add the rice and the lentils and pour the stock over. Give it a good stir!

  4. Bring up to the boil and then simmer for 25 minutes. Add extra water if it gets a bit dry.

  5. Enjoy!
