Ensuring your butter is soft and not blasted-in-the-microwave-and-separated, mix it with the sugar until well blended

Fold in the flour

Chop the chocolate by hand or blitz it in a food processor. You'll have a range of chunk sizes as well as some sweet dusty powder. This powder will lend your biccies an appetising golden hue. Mix in the chocolate until you have a ball of delectable homemade cookie dough

The dough will be a little sticky for rolling, so just squash it down with your hands until it's about 1.5cm/1/2" thick, then cut out the shape you want with a cutter or suitably-sized upturned glass/cup

Use a palette knife to transfer the tasty treats to your baking sheet. [No need to grease the sheet as there's plenty of wholesome butter in the biccies.] Leave a little space between them as they'll spread out a touch in the oven

Bake at 180C/350F/Gas mark 4 for about 15 minutes until they're just starting to colour, then use the palette knife to transfer them to a cooling rack while still warm
