  • 123g sifted self raising flour
  • 1/8 tea spoon salt
  • 1/2 tablespoon baking power
  • 2 egg yolks
  • 235ml milk
  • 4tablespoon butter melted
  • 1 egg white
  • 1 tablespoon sugar optional


  1. Sift the dry ingredients together

  2. In a another bowl mix the yolks most of the milk and the melted butter together until smooth

  3. Make a well in the middle of the dry ingredients and add the mixed wet ingredients all at once. Stir until just combined don't over mix

  4. Beat the egg white until light and fluffy and soft peaks appear add sugar to the egg . Fold the egg white gently into the batter add milk as necessary to get the right consistently

  5. Pour the mix into the hot pan with a little oil approximately half way up cook until golden brown and then flip the pan to the other side
