  • 123g sifted self raising flour
  • 1/8 tea spoon salt
  • 1/2 tablespoon baking power
  • 2 egg yolks
  • 235ml milk
  • 4tablespoon butter melted
  • 1 egg white
  • 1 tablespoon sugar optional

    Method

    • step 1

      Sift the dry ingredients together
    • step 2

      In a another bowl mix the yolks most of the milk and the melted butter together until smooth
    • step 3

      Make a well in the middle of the dry ingredients and add the mixed wet ingredients all at once. Stir until just combined don't over mix
    • step 4

      Beat the egg white until light and fluffy and soft peaks appear add sugar to the egg . Fold the egg white gently into the batter add milk as necessary to get the right consistently
    • step 5

      Pour the mix into the hot pan with a little oil approximately half way up cook until golden brown and then flip the pan to the other side
