Ingredients

  • 4oz margarine
  • 2 medium eggs
  • 4oz caster sugar
  • 5oz self raising flour
  • 3oz ground rice
  • few drops lemon essence
  • glace cherries

Method

  • STEP 1
    Heat oven to 200c/400f/gas mark 6. Have ready 20 paper cases or well greased patty tins.
  • STEP 2
    Cream margarine and sugar until light and fluffy. Beat in eggs with milk.
  • STEP 3
    Mix flour and ground rice, add to creamed mixture alternately with the egg mixture. Mix well.
  • STEP 4
    Half fill the bun cases with the mixture, place a piece of cherry on top of each and bake for 15-20min until firm.
