Ingredients
- 3oz margarine
- 4oz caster sugar
- 2 medium egg yolks
- 2 tbsp milk
- few drops vanilla essence
- 6oz self raising flour
- pinch salt
TOPPING:
- 2 medium egg whites
- 4oz caster sugar
- 2oz desiccated coconut
- chopped cherries and nuts
Method
- STEP 1Heat oven to 160c (325f) gas mark 3.
- STEP 2Grease and line a tin 28x18cm (11x17inch).
- STEP 3Cream margarine and sugar, beat in egg yolks, milk and essence.
- STEP 4Fold in the flour and the salt and spread in the tin.
- STEP 5Beat egg whites stiffly, fold in sugar and coconut.
- STEP 6Spread mixture over base and sprinkle with cherries and nuts.
- STEP 7Bake for about 45 min. Cut into slices when cool.
