Traditional South African pudding boiled in cinnamon syrup, as introduced to us by Ron and Juliana van der Merwe


For the syrup

  • 2 1/2 - 3 cups water
  • 1 - 1 1/4 cup sugar
  • 1 tsp fine cinnamon
  • 1 tbsp lemon juice

For the batter

  • 1/2 cup apricot jam
  • 2 tsp bicarbonate of soda
  • 1/2 cup butter
  • 1 1/2 cup flour
  • 1 tsp salt


  • STEP 1
    Start with the syrup, mix the ingredients for the syrup and bring to a boil.
  • STEP 2
    Now start with the batter. Mix the apricot jam, bicarbonate of soda and butter in a thick base pot till the butter has melted.
  • STEP 3
    Add the dry ingredients and mix well.
  • STEP 4
    Add spoonfulls of batter to the boiling syrup. The bicarbonate of soda will cause a effervescent effect.
  • STEP 5
    Put a lid on and boil for not more than 10 minutes.
  • STEP 6
    Serve with custard
