Start with the syrup, mix the ingredients for the syrup and bring to a boil.

Now start with the batter. Mix the apricot jam, bicarbonate of soda and butter in a thick base pot till the butter has melted.

Add the dry ingredients and mix well.

Add spoonfulls of batter to the boiling syrup. The bicarbonate of soda will cause a effervescent effect.

Put a lid on and boil for not more than 10 minutes.
