A small cake which has nuts, carrot and raisins

  • Extra equipment:
  • a cake or loaf tin
  • paper towel
  • Ingredients:
  • 150g self raising flour
  • 1 teaspoon baking powder
  • 150g soft brown sugar
  • 40g crushed brazil nuts
  • 50g raisins (you don't need to use raisins)
  • 125g of grated carrot
  • 2 eggs
  • 150 ml olive oil
  • 4 tsp maple syrup
  • For the topping:
  • 50g icing sugar
  • 75g cream cheese
  • 1 tsp vanilla essence
  • 25g crushed brazil nuts


    1. Preheat the oven to 180 degrease Celsius. Use margarine to grease the tin with
    2. Sift the flour and baking powder into a bowl. add the sugar ,nuts,carrot ,maple syrup and raisins (if you want) and mix well together.
    3. Add the eggs and oil into the bowl. Mix well
    4. Spoon the mixture into a tin and bake for 1 hr
    5. To make the topping, mix the icing sugar, cream cheese and vanilla essence together.
    6. Spread topping on to the cake's top and sides. sprinkle the nuts on. Chill before severing
