Carrot cake with brazil nuts

Ingredients

Ingredients:
- 150g self raising flour
- 1 teaspoon baking powder
- 150g soft brown sugar
- 40g crushed brazil nuts
- 50g raisins (you don't need to use raisins)
- 125g of grated carrot
- 2 eggs
- 150 ml olive oil
- 4 tsp maple syrup
For the topping:
- 50g icing sugar
- 75g cream cheese
- 1 tsp vanilla essence
- 25g crushed brazil nuts
Method
- STEP 1Preheat the oven to 180 degrease Celsius. Use margarine to grease the tin with
- STEP 2Sift the flour and baking powder into a bowl. add the sugar ,nuts,carrot ,maple syrup and raisins (if you want) and mix well together.
- STEP 3Add the eggs and oil into the bowl. Mix well
- STEP 4Spoon the mixture into a tin and bake for 1 hr
- STEP 5To make the topping, mix the icing sugar, cream cheese and vanilla essence together.
- STEP 6Spread topping on to the cake's top and sides. sprinkle the nuts on. Chill before severing
