Ingredients

Extra equipment:

  • a cake or loaf tin
  • paper towel

Ingredients:

  • 150g self raising flour
  • 1 teaspoon baking powder
  • 150g soft brown sugar
  • 40g crushed brazil nuts
  • 50g raisins (you don't need to use raisins)
  • 125g of grated carrot
  • 2 eggs
  • 150 ml olive oil
  • 4 tsp maple syrup

For the topping:

  • 50g icing sugar
  • 75g cream cheese
  • 1 tsp vanilla essence
  • 25g crushed brazil nuts

Method

  • STEP 1
    Preheat the oven to 180 degrease Celsius. Use margarine to grease the tin with

    Sift the flour and baking powder into a bowl. add the sugar ,nuts,carrot ,maple syrup and raisins (if you want) and mix well together.
  • STEP 3
    Add the eggs and oil into the bowl. Mix well
  • STEP 4
    Spoon the mixture into a tin and bake for 1 hr
  • STEP 5
    To make the topping, mix the icing sugar, cream cheese and vanilla essence together.
  • STEP 6
    Spread topping on to the cake's top and sides. sprinkle the nuts on. Chill before severing
