Crispy fried broccoli salad

This green spring salad is a celebration over finally gone winther.


  • 200 ml flour
  • 500 ml beer
  • 250 g broccoli florets
  • 150 g arugula
  • Half a red onion
  • 2 tbsp olive oil
  • 2 tsp red wine vinegar

Vegetable oil for frying

  • Salt and pepper


  • STEP 1
    Mix the the flour and the beer with a fork.
  • STEP 2
    Season. Stir well.
  • STEP 3
    Slice the broccoli florets.
  • STEP 4
    Rinse and dry arugula.
  • STEP 5
    Peel and slice the onion in half rings.
  • STEP 6
    Mix the arugula and the slides onion.
  • STEP 7
    Whisp the olive oil and the vinegar.
  • STEP 8
    Season and whisp again.
  • STEP 9
    Heat oil in a skillet.
  • STEP 10
    Dip the broccoli florets into the beer batter and fry in the skillet.
  • STEP 11
    Whisp again the olive oil with the vinegar.
  • STEP 12
    Add the dressing to the arugula and the onion and stir.
  • STEP 13
    Put the salad on plates and top with 2-3 fried broccoli florets.
