Method
step 1
Heat the oil in a heavy bottomed pan and saute the onions until soft and golden. Add garlic and cook for 3 mins until soft.
step 2
Add cumin, cayenne and tomatoes, season and stir until tomatoes are coated in oil. Add water, tomatoe puree, sugar and vinegar and cook on a medium heat for 15 minutes. Stir occassionally and press down the tomatoes so that they disintegrate.
step 3
Stir in the beans and cook for a further 10 minutes. Add a little more water if they seem too dry
