  • 1 Large (or 2 small) Onion, chopped chunky.
  • 2 Celery sticks, chopped.
  • 50g Bacon, chopped.
  • 2 tbsp Olive Oil
  • 1, 397g, tin chopped Tomatoes.
  • 2 Garlic cloves, crushed.
  • 150ml vegetable or chicken stock.
  • 1 tsp Cumin Seeds.
  • 1/2 tsp Cinnamon.
  • 2 tsp Coriander Seeds.
  • 1/2 tsp Ground Cumin.
  • 1/2 tsp Turmeric.
  • 1/4 tsp Chilli Powder.
  • 1 tin Chick Peas.
  • 1 tin of Black Eyed Beans.
  • Approx. 200g Mushrooms, Chopped if large, whole if small.
  • Salt & Blk Pepper.


    1. Heat the oil in an oven-proof casserole on the hob. Add Onions, Celery, Bacon & Garlic. Fry over a low heat until soft but not discoloured.
    2. Stir in all the spices. Cook for a further minute or two. Add the tomatoes, stock & S & P. Stir well.
    3. Add the beans. Stir & bring to the boil. Stir in the mushrooms .
    4. Cover & put in a preheated oven at 170/fan,190C/gas5 for 20 minutes.

Without the bacon it is a great vegi meal, serve with garlic bread, rice or pasta and also nice with grated cheese on it.

You can use any variations of beans. Lentils are particularly good.
