Ingredients

Base

  • 140g slightly salted butter
  • 300g digestive biscuit crumbs

Topping

  • 140g slightly salted butter
  • 300g digestive biscuit crumbs
  • 500g soft cheese
  • 300ml double cream
  • 85g icing sugar
  • 1tsp vanilla essence
  • 3-4 tbs cocoa powder

Method

  • STEP 1
    Crush the biscuits into fine crumbs. Melt the butter in a pan on medium heat before mixing into the crumbs thoroughly. Chill while making the filling.
  • STEP 2
    Beat soft cheese and icing sugar together then add cream, vanilla essence and cocoa powder. Mix thoroughly. Spoon over base and smooth with back of the spoon. Cover and chill for around 4 to 6 hours. You can add any extra toppings before or after chilling.
