Baked Rice Custard

Ingredients
- 50 Gram Pudding rice (2 oz)
- 3 Eggs, beaten
- 50 Gram Sugar (2 oz)
- 1/2 Teaspoon Vanilla essence
- 600 ml Milk (1 pint)
- 40 Gram Sultanas (1 1/2 oz)
- Pinch Ground nutmeg
Method
- STEP 1Cook the rice in boiling water for 10 minutes, drain well.
- STEP 2Beat the eggs, sugar, essence and milk together. Add the sultanas and rice.
- STEP 3Pour into an ovenproof dish. Sprinkle with grated nutmeg.
- STEP 4Stand in a baking dish containing enough hot water to come halfway up the sides of the dish. Bake at 170 °C / 325 °F / Gas 3 for 1 1/2 hours or until just set
