Perfect veggie dish or side for red meat

6-8 medium sized red onions
3 cloves of garlic
100ml of sherry vinegar
1 tbsp olive oil4-5 sprigs of thyme
150 gm of creamy blue cheese (recommend roquefort)
Handful of pine nuts
Sea Sale and fresh black pepper
Keep the screen awake with cook mode on the
Good Food app.

step 1
Preheat the oven to gas mark 6
step 2
Peel and trim onions so they sit flat
step 3
Make a deep cross at the top of each
step 4
Poke the garlic inside the slits
step 5
Fit the onions snugly into an oven proof dish
step 6
Pour sherry and sherry vinegar over the onions
step 7
Drizzle with olive oil & Scatter the thyme and season
step 8
Cover tightly with foil and Bake for 25-35 mins
step 9
When baked and soft, scatter toasted pine nuts and crumble the cheese over the onions
step 10
Season & Serve - Bon Profit:)
