  • 6-8 medium sized red onions

  • 100ml of sherry vinegar

Method

  • step 1

    Preheat the oven to gas mark 6
  • step 2

    Peel and trim onions so they sit flat
  • step 3

    Make a deep cross at the top of each
  • step 4

    Poke the garlic inside the slits
  • step 5

    Fit the onions snugly into an oven proof dish
  • step 6

    Pour sherry and sherry vinegar over the onions
  • step 7

    Drizzle with olive oil & Scatter the thyme and season
  • step 8

    Cover tightly with foil and Bake for 25-35 mins
  • step 9

    When baked and soft, scatter toasted pine nuts and crumble the cheese over the onions
  • step 10
