Mix all the ingredients in a bowl and season

With a non stick pan add olive oil and place on a medium heat.

The fritta's should be approximately a tablespoon in size each so you can put a few in the pan at a time

Add the tablespoons of mixture to the pan and fry them for only a couple of minutes to they go golden brown colour. Once golden turn over and repeat on the other side of the fritta

they should have a crunchy texture on the outside and smooth and fluffy in the centre

Once done serve with a sprinkle of parmigiana and black pepper
