- 2 Salmon fillets
- 1 Onion
- 2 Garlic cloves
- 1 tsp Paprika
- 4 tomatoes
- 400g tin butter beans
- 1 lemon
- 250ml veg stock
Asparagus
- 2 Salmon fillets

- 8 asparagus sticks

Method
- STEP 1fry onions in a big pan on low heat for 5 mins. add garlic and fry another 8 mins, add paprika for 1 min. add chopped tomatoes and butter beans
- STEP 2Add lemon zest, juice of half a lemon, the stock and the fish to the pan, cover and cook for 10 mins.
- STEP 3Melt the butter and crushed garlic to a small frying pan. Add the asparagus and cook for 2-3 mins.
- STEP 4Season and serve the fish sprinkled with fresh basil, lemon wedge and the asparagus. (add sliced radishes to the butter bean mix for extra spice)
