Simple plum crumble, makes a difference from rhubarb

  • 12-15 large ripe plums
  • 75g caster sugar
  • 1 tsp vanilla extract
  • 1 whole lemon zest


  • 350g plain flour
  • 175g unsalted butter
  • 90g demerara sugar
  • 90g light brown sugar


  1. Pre-heat oven 180C/Gas mark 4

  2. Stone and quarter plums. Mix the plums with sugar, vanilla extract and lemon zest. Move to oven-proof baking dish and set aside

  3. Put flour, butter and sugars into a mixing bowl. Using your hands rub together until it resembles breadcrumbs.

  4. Cover the plums with half of the crumble mix and press down lightly. Sprinkle the other half over the top for a crunchy top.

  5. Place in centre of the oven for 30 min or until the crumble topping is golden brown and the plums softened.
