Pre-heat oven 180C/Gas mark 4

Stone and quarter plums. Mix the plums with sugar, vanilla extract and lemon zest. Move to oven-proof baking dish and set aside

Put flour, butter and sugars into a mixing bowl. Using your hands rub together until it resembles breadcrumbs.
- STEP 4
Cover the plums with half of the crumble mix and press down lightly. Sprinkle the other half over the top for a crunchy top.
- STEP 5
Place in centre of the oven for 30 min or until the crumble topping is golden brown and the plums softened.
