Ingredients
Salad
- Large Orange (Half sliced, half juiced)
- Avocado (Sliced into chunks)
- Cherry tomatoes
- 1/4 Cucumber (sliced and quartered)
- Salad Leaves
- Sundried tomatoes
- Pumpkin Seeds (Roasted for 10mins until coloured)
- 1 Carrot (grated)
- Halloumi (sliced)
Dressing
- Large Orange (Half sliced, half juiced)

- 1/4 Cucumber (sliced and quartered)
- Salad Leaves
- Sundried tomatoes
- Pumpkin Seeds (Roasted for 10mins until coloured)
- 1 Carrot (grated)
- Halloumi (sliced)
- 3/4 Tbsp Balsamic vinegar or soy sauce
- Juice of half an orange (above)
- Large piece of ginger (grated)
- 3/4 Tbsp Sesame Oil
- 2 tsp Italian Herbs
- 1/2 tsp Chilli Flakes
Method
- STEP 1Roasted sweet potato, gas mark 6. Dependant on size 45mins - 1hr. Alternatively you could use half a butternut squash per person (similar cooking time, with salt pepper and a dash of olive oil).
- STEP 2Combine all of the dressing ingredients in bowl and whisk
- STEP 3Chop all of the salad ingredients
- STEP 4Grill halloumi in a pan
- STEP 5Arrange salad ingredients on a plate and sprinkle over pumpkin seeds and dressing. Take sweet potato out of the oven, slice open and add a little butter. Optional- drizzle with yoghurt.
