
Pork chops with rainbow salsa

A fresh salsa made from Kalamata olives, red pepper and orange that generously serves two

- 2 thick-cut free-range pork chops
- Salt and pepper
For the salsa
- 2 thick-cut free-range pork chops
- Salt and pepper
- 1/3 cup chopped Kalamata olives
- 1 red pepper, diced
- Zest of 1/2 orange
- 1 orange, peeled and chopped into pieces
- 1 spring onion, chopped
- 1 clove garlic, minced
Method
step 1
Heat grill and season the chops well on both sides. Place under grill for 8 minutes. Turn and cook for 8 minutes longer.step 2
Place all of the salsa ingredients in a bowl and mix well.step 3
Transfer the grilled chops to plates and split the salsa between them.
