Ingredients

  • 1 Large Cooked Beetroot
  • 4 Spring Onions
  • Salad Leaves
  • Handful of mixed seeds (sunflower, sesame, chia, linseed)

Garlic Yoghurt Dressing

  • 1 Large Cooked Beetroot
  • 4 Spring Onions
  • Salad Leaves
  • Handful of mixed seeds (sunflower, sesame, chia, linseed)
  • Greek Yoghurt
  • 1 Clove of Garlic
  • Sea Salt

Method

  • STEP 1
    Chop and dice the beetroot and cut the spring onions into small pieces, then add both to a salad bowl with the leaves and the seeds.
  • STEP 2
    Put the salt and the garlic into a small bowl and crush together, then add 4 tablespoons of yoghurt and mix.
  • STEP 3
    Pour the dressing into the salad bowl and mix it around to ensure it coats all the ingredients, then serve.
