- 1 Onion
- 3 tbsp Sundried Tomato Paste
- 1/2 tbsp Garlic Paste
- 100ml Red Wine
- 4 Slices Bacon (optional)
- 1/2 tbsp Mixed Herbs
- 1 Tin Chopped Tomato
- 1 tbsp Olive Oil
- 1 tbsp Tomato Puree
- Pasta
- Cheddar Cheese (Optional)
Method
step 1
Chop the onion and bacon if using. Add oil to a pan and add the onion. Cook for about 5 minutes until starting to go soft and bacon cooked. Add the garlic paste and mixed herbs and cook for another minute.step 2
Add the red wine and reduce for another 5 minutes. Then mix in the sun-dried tomato paste and cook for another minute.step 3
Add the Tin Tomatoes and Tomato Puree and give a good stir. Leave to gently simmer for 10 minutes or set aside for later. You can add some water to loosen if needed.step 4
Cook the pasta as recommended drain and add to the sauce and give it a good mix. Serve with grated cheese. You can melt the cheese under the grill on top of the pasta if preferred.
