Chop the onion and bacon if using. Add oil to a pan and add the onion. Cook for about 5 minutes until starting to go soft and bacon cooked. Add the garlic paste and mixed herbs and cook for another minute.
Add the red wine and reduce for another 5 minutes. Then mix in the sun-dried tomato paste and cook for another minute.
Add the Tin Tomatoes and Tomato Puree and give a good stir. Leave to gently simmer for 10 minutes or set aside for later. You can add some water to loosen if needed.
Cook the pasta as recommended drain and add to the sauce and give it a good mix. Serve with grated cheese. You can melt the cheese under the grill on top of the pasta if preferred.
