Ingredients

TORTILLAS

  • 1 3/4 cups of wheat flour
  • 1 1/4 cups of Milk
  • 40G cold Butter chopped in small cubes
  • 2 egg yolks
  • 1/2 tsp of Salt
  • Oil for frying

FILLING

  • 1 3/4 cups of wheat flour
  • 1 1/4 cups of Milk
  • 40G cold Butter chopped in small cubes
  • 2 egg yolks
  • 1/2 tsp of Salt
  • Oil for frying
  • 1 tbs of Oil
  • 1 tbs well small minced white onion
  • 1 cooked chicken breast chopped into small squares
  • 1/2 cup chopped mushrooms into small squares
  • 1/4 cup cup of milk cream
  • 1/2 tsp freeze-dried coffee or instant dissolved in 1 teaspoon of water
  • 1 pinch of fresh chopped tarragon
  • Salt and Pepper for taste

BATTER

  • 1 3/4 cups of wheat flour
  • 1 1/4 cups of Milk

  • 1/2 tsp of Salt

  • 1 tbs well small minced white onion
  • 1 cooked chicken breast chopped into small squares
  • 1/2 cup chopped mushrooms into small squares
  • 1/4 cup cup of milk cream
  • 1/2 tsp freeze-dried coffee or instant dissolved in 1 teaspoon of water
  • 1 pinch of fresh chopped tarragon
  • Salt and Pepper for taste
  • 4 beaten eggs
  • 1 cup very fine bread crumbs
  • 3 tbs grated Parmesan cheese

COFFEE SAUCE

  • 1 3/4 cups of wheat flour
  • 1 1/4 cups of Milk
  • 40G cold Butter chopped in small cubes
  • 2 egg yolks
  • 1/2 tsp of Salt
  • Oil for frying
  • 1 tbs of Oil
  • 1 tbs well small minced white onion
  • 1 cooked chicken breast chopped into small squares
  • 1/2 cup chopped mushrooms into small squares
  • 1/4 cup cup of milk cream
  • 1/2 tsp freeze-dried coffee or instant dissolved in 1 teaspoon of water
  • 1 pinch of fresh chopped tarragon
  • Salt and Pepper for taste
  • 4 beaten eggs
  • 1 cup very fine bread crumbs
  • 3 tbs grated Parmesan cheese
  • 1 small can of pineapple in its own juice
  • 2 tbs of vinegar
  • 1 cup brewed coffee
  • 2 tbs of Ketchup
  • 2 tbs of brown sugar
  • 2 tbs of soy sauce
  • 2 tsp corn starch
  • Salt and Pepper for taste

Method

  • STEP 1
    For the Tortillas. Put all the ingredients for the dough in the electric blender and mix until you obtain a smooth paste and homogeneous. Let stand for a few minutes.
  • STEP 2
    Heat oil in a skillet over medium heat and saute tablespoons of dough until golden ( remember to cover just spoon the dough so that the tortillas are not too thick and raw) . Pass tortillas absorbent paper to remove excess fat and set aside covered with a damp cloth.
  • STEP 3
    Heat oil in a pan over medium heat and saute the onions until translucent . Add chicken and when lightly browned add the remaining filling ingredients , stirring very gently (The mixture should be moist . If necessary add a little more cream or water).
  • STEP 4
    Fill tortillas with this mixture and form rolls squeezing them lightly by hand . pass them in beaten egg, then bread crumbs mixed with Parmesan cheese. Fry in hot oil for a few seconds and pass by the absorbent paper to remove excess fat . Hot aside.
  • STEP 5
    Put warm pineapple with syrup in a pan over medium heat and add the remaining ingredients for the sauce .Cook stirring constantly until sauce thickens slightly and add a pinch of salt and pepper if necessary . Serve the rolls in portions with coffee sauce in a bowl aside.
