Does what it says on the tin, with fresh or frozen prawns

  • • 455g dried spaghetti
  • • sea salt and freshly ground black pepper
  • • extra virgin olive oil
  • • 2 cloves of garlic, peeled and finely chopped
  • • 1–2 dried red chillies, crumbled
  • • 400g peeled raw prawns
  • • 1 small wineglass of white wine
  • • 2 heaped tablespoons sun-dried tomato purée, or 6 sun-dried tomatoes blitzed in a blender
  • • zest and juice of 1 lemon
  • • 2 handfuls of rocket, roughly chopped


    1. Cook spaghetti
    2. Fry garlic and chilli in oil.
    3. When garlic browns add prawns for 1 minute.
    4. Add wine and tomato puree for 1-2 mins.
    5. Toss cooked spaghetti with sauce and add lemon and half the rocket and season
    6. serve with grated lemon and rest of rocket
