Ingredients

  • 1 beef fillet, trimmed, (about 1.5kg)
  • 3 tbsp olive oil
  • 1 1/2 tsp coarse sea salt
  • 1 tsp black pepper
  • 40g watercress
  • 20g wholegrain mustard
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, crushed
  • 2 tbsp olive oil
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 110ml soured cream

Method

  • STEP 1
    grill beef on high 90 secs each side
  • STEP 2
    roast beef at 220c for 14 mins for med-rare
  • STEP 3
    blitz everything else except sour cream
  • STEP 4
    add sour cream
