peppers marinated in herb sauce with mozzarella and rocket from Ottolenghi

  • 6 romano peppers
  • 120ml olive oil
  • 2.5 tbsp finely chopped coriander
  • 2.5 tbsp finely chopped flat leaf parsley
  • 1 garlic clove, crushed
  • 3 tbsp cider vinegar
  • 100g rocket
  • 200g of your chosen cheese - mozzarella or feta
  • sea salt and black pepper


    1. season peppers with oil and salt and pepper
    2. roast at 200c for 15 mins
    3. blitz rest except rocket and cheese
    4. marinade peppers in covered bowl for two hours
    5. put peppers on beds of rocket followed by chunks of mozzarella and dressing
