  • 500g lean mince
  • 25g wholemeal breadcrumbs
  • 2 garlic cloves, crushed
  • 40g sun dried tomatoes in oil, drained & chopped
  • 2 tbsp chopped fresh cooriander
  • 4 seeded buns
  • 50g rocket

Salsa Sauce

  • 225g vine tomatoes, finely chopped
  • 1 red pepper, finely chopped
  • 1/2 fresh green chilli, finely chopped
  • 1 red chilli, finely chopped
  • 2 tsp balsamic vinegar
  • 1 tbsp snipped fresh chives
  • 1 tbsp chopped fresh coordiander


  1. Preheat grill or barbecue to moderately hot. Place the minced beef, breadcrumbs, garlic, sun-dried tomatoes and coriander in large bowl and use hands to mix ingredients together. Divide mixture equally into 4 and shape into burgers, about 10cm across and a similar size to buns.

  2. Brush grill rack or grill pan lightly with oil and cook burgers for 3-4 mins on each side, until browned on outside and cooked through.

  3. To make salsa, mix together all ingredients in bowl. Season to taste. You can chop all salsa ingredients together in food processor to save time.

  4. Split buns in half and pop under grill or onto barbecue rack to toast lightly. Place a few rocket leaves on each base, top with a burger and add spoonful of salsa, then replace tops, serve. Serve with sweet patatoe fries.
