  • 1 large peeled and cubed sweet potato
  • 1/4 cup tahini
  • 2 Tbsp extra-virgin olive oil
  • 2 garlic cloves
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • juice from 1/2 lemon or 1 lime
  • 1 tsp orange zest
  • 1 tbsp maple syrup
  • salt and pepper to taste

Method

  • step 1

    Steam or boil the sweet potato until very tender.
  • step 2

    Puree in food processor along with tahini, olive oil, garlic cloves, cumin, paprika, lemon juice, orange zest and maple syrup.
