Sift the flour into a large bowl, then dice and add the butter. Rub it in until it looks like fine breadcrumbs.

Add a pinch of salt.

Add the water and mix to make a firm dough.

Roll out the pastry so that it is as thick as a pound coin. Use the pastry cutter to make the suitable shapes. Put the shapes into the muffin tins.

Put in your jam (I used Strawberry and Blackcurrent jam)

Bake at 200C/180C fan/gas 6 for 12-15 mins, or until the tarts are a golden colour.
