Ingredients
- 3 beaten eggs
- 150g self-raising flour
- 1/2 tsp baking powder
- 150g butter, softened
- 150g caster sugar
- 3 drops vanilla extract
Decration & Filling
- 3 beaten eggs
- 150g self-raising flour
- 1/2 tsp baking powder
- 150g butter, softened
- 150g caster sugar
- 3 drops vanilla extract
- 1 jar jam
- 80g whipped cream or butter cream
- 10g Icing sugar
Method
- STEP 1Preheat oven to 180c. Add the butter and sugar into a bowl and beat until light, pale and fluffy.
- STEP 2Pour the beaten eggs in little by little, stirring in-between. TIP: If it begins to curdle, add a little flour.
- STEP 3Add the vanilla extract and mix.
- STEP 4Sift the flour and baking powder in and mix.
- STEP 5Divide evenly between two greased 20cm cake tins.
- STEP 6Bake for 20-30 minutes.
- STEP 7Allow to cool and remove from tins.
- STEP 8Sandwich both together with the cream/butter cream and jam in the middle.
- STEP 9Dust with icing sugar.
- STEP 10Ta da! Ready to eat!
