Ingredients

  • 3 beaten eggs
  • 150g self-raising flour
  • 1/2 tsp baking powder
  • 150g butter, softened
  • 150g caster sugar
  • 3 drops vanilla extract

Decration & Filling

  • 3 beaten eggs

  • 150g butter, softened
  • 150g caster sugar
  • 3 drops vanilla extract
  • 1 jar jam
  • 80g whipped cream or butter cream
  • 10g Icing sugar

Method

  • STEP 1
    Preheat oven to 180c. Add the butter and sugar into a bowl and beat until light, pale and fluffy.
  • STEP 2
    Pour the beaten eggs in little by little, stirring in-between. TIP: If it begins to curdle, add a little flour.
  • STEP 3
    Add the vanilla extract and mix.
  • STEP 4
    Sift the flour and baking powder in and mix.
  • STEP 5
    Divide evenly between two greased 20cm cake tins.
  • STEP 6
    Bake for 20-30 minutes.
  • STEP 7
    Allow to cool and remove from tins.
  • STEP 8
    Sandwich both together with the cream/butter cream and jam in the middle.
  • STEP 9
    Dust with icing sugar.
  • STEP 10
    Ta da! Ready to eat!
