This quick and easy cake recipe is bound to be a winner every time; everybody loves this classic, and now it's easier than ever!

- 3 beaten eggs
- 150g self-raising flour
- 1/2 tsp baking powder
- 150g butter, softened
- 150g caster sugar
- 3 drops vanilla extract
Decration & Filling
- 3 beaten eggs
- 150g self-raising flour
- 1/2 tsp baking powder
- 150g butter, softened
- 150g caster sugar
- 3 drops vanilla extract
- 1 jar jam
- 80g whipped cream or butter cream
- 10g Icing sugar
Method
step 1
Preheat oven to 180c. Add the butter and sugar into a bowl and beat until light, pale and fluffy.step 2
Pour the beaten eggs in little by little, stirring in-between. TIP: If it begins to curdle, add a little flour.step 3
Add the vanilla extract and mix.step 4
Sift the flour and baking powder in and mix.step 5
Divide evenly between two greased 20cm cake tins.step 6
Bake for 20-30 minutes.step 7
Allow to cool and remove from tins.step 8
Sandwich both together with the cream/butter cream and jam in the middle.step 9
Dust with icing sugar.step 10
