This quick and easy cake recipe is bound to be a winner every time; everybody loves this classic, and now it's easier than ever!

Ingredients

  • 3 beaten eggs
  • 150g self-raising flour
  • 1/2 tsp baking powder
  • 150g butter, softened
  • 150g caster sugar
  • 3 drops vanilla extract

Decration & Filling

  • 1 jar jam
  • 80g whipped cream or butter cream
  • 10g Icing sugar

Method

  1. Preheat oven to 180c. Add the butter and sugar into a bowl and beat until light, pale and fluffy.

  2. Pour the beaten eggs in little by little, stirring in-between. TIP: If it begins to curdle, add a little flour.

  3. Add the vanilla extract and mix.

  4. Sift the flour and baking powder in and mix.

  5. Divide evenly between two greased 20cm cake tins.

  6. Bake for 20-30 minutes.

  7. Allow to cool and remove from tins.

  8. Sandwich both together with the cream/butter cream and jam in the middle.

  9. Dust with icing sugar.

  10. Ta da! Ready to eat!
