Sticky Marmalade Chicken

- 4 skinless boneless chicken breasts
- 1 tbsp olive oil
- 300ml chicken stock
- 4 tbsp fine cut marmalade
- 1 tsp thyme leaves
- STEP 1Season chicken with salt and pepper. Fry in the olive oil for 10 minutes turning over half way
- STEP 2Add stock, marmalade and thyme. Simmer for 5 minutes.
- STEP 3Remove the chicken and keep warm.
- STEP 4Boil the mixture to a syrup and pour over chicken.
