Carrot cake bites

These yummy mini carrot cakes are perfect for breakfast served with yoghurt or dunked in milk and they are healthy too!


  • 100g Margarine
  • 80g Brown sugar
  • 1 egg
  • 225g wholemeal flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons honey
  • 225g grated carrots
  • 25g Walnuts
  • 25g raisins


  • STEP 1
    Cream the butter and sugar together.
  • STEP 2
    Add the dry ingredients and the honey
  • STEP 3
    Finally add the carrot
  • STEP 4
    Spoon into cake papers in muffin tins and smooth the top. Bake at 180°C for 30 mins.
