These yummy mini carrot cakes are perfect for breakfast served with yoghurt or dunked in milk and they are healthy too!

  • 100g Margarine
  • 80g Brown sugar
  • 1 egg
  • 225g wholemeal flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons honey
  • 225g grated carrots
  • 25g Walnuts
  • 25g raisins


  1. Cream the butter and sugar together.

  2. Add the dry ingredients and the honey

  3. Finally add the carrot

  4. Spoon into cake papers in muffin tins and smooth the top. Bake at 180°C for 30 mins.
