  • 250g smoked mackerel, flaked
  • 200g cream cheese (full fat)
  • 1 lemon, zested and juiced
  • 1-2 tblsp creamed horseradish
  • 2tblsp chopped parsley
  • 2tblsp chopped chives

    Method

    • step 1

      Blend smoked mackerel, cheese, lemon juice and zest with a fork or in a food processor
    • step 2

      Stir in herbs and horseradish
    • step 3

      Chill until ready to serve, with slices of whole-grain toast and wedges of lemon

    This is an absolutely excellent recipe. I have served it at several dinner parties and at least one person always asks for the recipe. Personally I prefer to use a fork rather than a blender to blend the main ingredients as this gives a more textured result.
