Hot water crust pastry

  • 450g plain flour
  • 1 top salt
  • 175g lard
  • 225ml milk and water mixed to equal portions


  • STEP 1
    Warm a mixing bowl and sift in the flour and salt. Make a well in the centre. Heat the lard in the milk and water until just boiling. Pour into well made in flour and stir quickly until thick. Continue working by hand to form a smooth dough
