Carrot cake

Temptingly sweet


  • 200g butter, melted
  • 100g caster sugar
  • 125g brown sugar
  • 150g grated carrots (About 3 large)
  • 75 chopped walnuts
  • 1 tbsp raisins
  • 1/2 tsp honey
  • 1 tbsp milk
  • 1/2 cinnamon
  • 1 tbsp greek yogurt
  • 3 large eggs
  • 1/2 tsp vanilla extract
  • 250g self-raising flour


  • 250g soft cheese
  • 100g icing sugar
  • 1/2 tsp vanilla extract


  • STEP 1
    Preheat the oven to gas mark 5/180C. Grease a square or round baking tin with a little oil.
  • STEP 2
    Mix all of the ingredients together apart from the flour, using an electric mixer, then fold in the flour using a spatula or wooden spoon.
  • STEP 3
    Pour into the prepared tin and bake for 45-65 minutes or until a skewer inserted comes out clean
  • STEP 4
    While cooling, beat all of the frosting ingredients together and smooth over cake when completely cool.
