A light, fluffy sponge cake. You may find it to be slightly flat.

  • 150g self-raising flour
  • 120g caster sugar
  • 100g margarine
  • 2 eggs
  • 2 tbsp milk


  • icing sugar
  • water
  • food colouring (optional)


  1. Preheat an oven to 190C

  2. In a bowl add all cake ingredients

  3. Mix until it is a smooth, creamy batter

  4. Pour into a cake tin and spread right to the edges. Flatten the top.

  5. Now make up the icing. Add icing sugar to a bowl. Pour in 1 teaspoon of water until it is slightly runny and there are now lumps. Ad food colouring for a burst of colour

  6. Take the cake out of the oven. Wait until it is completely cool and then coat the top in icing. Add toppings if desired.
