
Rawmunchies - Raw Vegan Zucchini Sushi

Ingredients
Sushi
- 4 untoasted nori sheets
Rice
- 4 untoasted nori sheets
- 2 peeled zucchini
- juice of 1 lemon
- 2 teaspoons fresh grated ginger
- 2 teaspoons cold pressed sesame oil
- 1 teaspoon maple syrup
- 1-2 teaspoons Coconut Aminos or Tamari
- 1 teaspoon apple cider vinegar
- 1 teaspoon nutmeg
- 1 teaspoon ginger powder
Vegetables
- 4 untoasted nori sheets
- 2 peeled zucchini
- juice of 1 lemon
- 2 teaspoons fresh grated ginger
- 2 teaspoons cold pressed sesame oil
- 1 teaspoon maple syrup
- 1-2 teaspoons Coconut Aminos or Tamari
- 1 teaspoon apple cider vinegar
- 1 teaspoon nutmeg
- 1 teaspoon ginger powder
- avocado
- cucumber and dill
- different colour peppers
Method
- STEP 1Cut the zucchini into 2 cm pieces. In a food processor pulse until you reach rice consistency.
- STEP 2Add the rest of the Rice ingredients.
- STEP 3Wet a 10 cm rectangle section across the nori sheet and place rice portion on it. Place vegetables and roll, closing the sheet (it's best to wet the top 2 cm of the sheet before closing).
