  • 4 untoasted nori sheets


  • 2 peeled zucchini
  • juice of 1 lemon
  • 2 teaspoons fresh grated ginger
  • 2 teaspoons cold pressed sesame oil
  • 1 teaspoon maple syrup
  • 1-2 teaspoons Coconut Aminos or Tamari
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger powder


  • avocado
  • cucumber and dill
  • different colour peppers


  1. Cut the zucchini into 2 cm pieces. In a food processor pulse until you reach rice consistency.

  2. Add the rest of the Rice ingredients.

  3. Wet a 10 cm rectangle section across the nori sheet and place rice portion on it. Place vegetables and roll, closing the sheet (it's best to wet the top 2 cm of the sheet before closing).
