Ingredients

Batter

  • 2 cups dates, soaked for 1 hour
  • 2 bananas
  • 1 teaspoon cinnamon

Fruit

  • 2 cups dates, soaked for 1 hour
  • 2 bananas
  • 1 teaspoon cinnamon
  • 1 cup blueberries

Icing

  • 2 cups dates, soaked for 1 hour
  • 2 bananas
  • 1 teaspoon cinnamon
  • 1 cup blueberries
  • 1 cup dates, soaked for 1 hour
  • 1/2 cup blueberries
  • meat of 1 Thai coconut
  • 1 teaspoon alcohol-free vanilla extract

Method

  • STEP 1
    In a food processor or high speed blender, blend till smooth all Batter ingredients. Add the blueberries and mix.
  • STEP 2
    Spread over spiralized apples and serve with berries.
  • STEP 3
    Pour into paper cases and dehydrate at at 42 degrees Celsius (108 degrees Fahrenheit) for 6-7 hours until top and sides are firm.
  • STEP 4
    In a food processor or high speed blender, blend till smooth all Icing ingredients, and spread icing over the cupcakes, decorating with blueberries.
