Ingredients
Pasta
- 1 zucchini spiralized
- 1/2 cucumber spiralized
- 2 tablespoons olive oil
- 2 tablespoons coconut aminos
- pinch salt
Pesto
- 1 zucchini spiralized
- 1/2 cucumber spiralized
- 2 tablespoons olive oil
- 2 tablespoons coconut aminos
- pinch salt
- 1 avocado
- juice of 1 lemon
- 1 cup dill
- 1/2 cup chives
- 1 teaspoon olive oil
- a few mint leaves
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon za'atar
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
Method
- STEP 1At least 30 minutes before serving, mix the spiralized zucchini with olive oil, coconut aminos and salt. Let stand to soften zucchini.
- STEP 2In a food processor or high speed blender, blend Pesto ingredients
- STEP 3Mix with pasta and serve
