Smoked Fish Omelette

Ingredients
- 4 Spring Onions
- 200g Smoked fish
- 2 small knobs of butter
- 1 lemon
- salt and pepper
- 5 large eggs
- Parmesan cheese
Method
- STEP 1Fry spring onions in olive oil on a low heat. Flake in the fish. Add the butter. Zest half a lemon and add a pinch of black pepper. Cook for 3 or 4 minutes.
- STEP 2Beat the eggs. Add the Parmesan cheese. Add a pinch of salt and pepper. Pour into the fish mix. Cook until firm.
