  • 4 Spring Onions
  • 200g Smoked fish
  • 2 small knobs of butter
  • 1 lemon
  • salt and pepper
  • 5 large eggs
  • Parmesan cheese


  1. Fry spring onions in olive oil on a low heat. Flake in the fish. Add the butter. Zest half a lemon and add a pinch of black pepper. Cook for 3 or 4 minutes.

  2. Beat the eggs. Add the Parmesan cheese. Add a pinch of salt and pepper. Pour into the fish mix. Cook until firm.
