Looking for cake like mixture but without white flour and sugar? The pumpkin gives a very good texture and the berries give a sweet - sour taste. Yum!

  • 2 eggs
  • 150g mashed pumpkin
  • 3tsp flax meal
  • 3tsp rice flour
  • 2tsp almond milk
  • frozen berries
  • small banana
  • 3 dates
  • cinnamon / vanilla
  • baking powder
  • anything else - orange/lemon zest if you wish


  1. Pre-heat the over to 200˚. Mash the pumpkin and add the eggs. Add all the ingredients and mix well. Cut the dates and add them with the frozen berries and the banana in the end.

  2. Put some coconut oil or butter in the pan and pour the mixture. I used a small pan (20x20cm).

  3. Bake for around 20 minutes but check on it as my over is a little bit strange. Top with coulis, fruits, tahini or honey. Put some nuts or coconut flakes on top and enjoy!
