• 2 eggs
  • 150g mashed pumpkin
  • 3tsp flax meal
  • 3tsp rice flour
  • 2tsp almond milk
  • frozen berries
  • small banana
  • 3 dates
  • cinnamon / vanilla
  • baking powder
  • anything else - orange/lemon zest if you wish


  • STEP 1
    Pre-heat the over to 200˚. Mash the pumpkin and add the eggs. Add all the ingredients and mix well. Cut the dates and add them with the frozen berries and the banana in the end.
  • STEP 2
    Put some coconut oil or butter in the pan and pour the mixture. I used a small pan (20x20cm).
  • STEP 3
    Bake for around 20 minutes but check on it as my over is a little bit strange. Top with coulis, fruits, tahini or honey. Put some nuts or coconut flakes on top and enjoy!
