Ingredients
Pastry
100g Plain Flour
50g Hard Margarine
10g Sugar
1 Egg Yolk
1 Tablespoon Milk
Filling
100g Plain Flour
50g Hard Margarine
10g Sugar
1 Egg Yolk
1 Tablespoon Milk
50g Soft Margarine
50g Caster Sugar
1 Egg Lightly Beaten
50g Self Raising Flour
Vanilla Essene if Desired
Approximately 2 Tablespoons Jam
Method
STEP 1
Preheat oven to Gas Mark 4/180C.
STEP 2
Sieve flour. Cut fat into small cubes, then rub into the flour with fingertips (or use food processor). Add egg yolk and milk to bind. Wrap in clingfilm and place in fridge to relax.
STEP 3
Separately, cream soft margarine with sugar. Add the egg and beat well. Add flour and finally vanilla essence and mix to a soft consistency.
STEP 4
Roll out pastry on a lightly floured surface. Line foil container.
STEP 5
Put a little jam in the base then add cake mixture on the top.
