
Lentil Salad with an Avocado dressing

Ingredients
Avocado Dressing
- -1/2 Avocado
- -1/2 Garlic Clove
- -1/4 cup of Dairy-free Yogurt
- -2 Tablespoons of Olive Oil
- -1/2 Lime (Juice)
Salad
- -1/2 Avocado
- -1/2 Garlic Clove
- -1/4 cup of Dairy-free Yogurt
- -2 Tablespoons of Olive Oil
- -1/2 Lime (Juice)
- -1/2 Avocado (diced)
- -1/2 Lime (juice)
- -250g of Tomatoes
- -1/2 garlic clove (crushed)
- -1 Red Onion (chopped)
- -40g of Spinach
- -40g of Rocket
- -1 carton of Organic Green Lentils (washed & drained) already cooked
- -1 Teaspoon of White Wine Vinegar
Method
- STEP 1Place all of the Salad ingredients into a large mixing bowl, toss until fully combined.
- STEP 2For the dressing, place the Avocado, Garlic, Yogurt, Oil, Lime Juice, Water, Pepper, salt and Chilli flakes in to a Food processor or blender.
- STEP 3Whizz up until silky smooth. If the dressing is too thick, add in more water until desired .
- STEP 4Serve the salad with a drizzle of the delicious Avocado dressing, sprinkling of Sesame seeds and a slice of Lime for a zesty kick!!!
