Ingredients

  • 2 tbs cold water
  • 2 cups sugar
  • 4 cups boiling water
  • 1/4 vanilla pod
  • 1/4 nutmeg
  • 2 cloves
  • 1 small cinnamon stick
  • 10 black peppercorns
  • 20 alspice berries
  • 1 1/3 cup clear honey
  • grated orange rind
  • 2 cups good quality vodka

Method

  • STEP 1
    Heat sugar in 2 tbs water until it dissolves, then stir in the boiling water. Add vanilla pod, nutmeg, cloves, cinnamon stick, peppercorns and allspice berries, bring to a boil, cover and simmer for 5 minutes.
  • STEP 2
    Strain the carael mixture and return to the pan. Stir in the honey and orange rind and heat stirring until the honey has completly dissolved.
  • STEP 3
    Bring to a boil, remove pan from the heat and gradually stir in the vodka. Serve hot or cold.
