Poké
- 1 cup cooked brown rice
- 150g cooked prawns
- 1/2 a mango, chopped
- 1/4 cup chopped cucumber
- 1/4 an avocado, chopped
- 1/4 cup chickpeas (roasted or simply from the can)
- 1tbs kim chi
- 1 tbs pickled ginger
- 1 radish, finely sliced
- 1/4 cup coriander leaves
Sauce
- 1 cup cooked brown rice
- 150g cooked prawns
- 1/2 a mango, chopped
- 1/4 cup chopped cucumber
- 1/4 an avocado, chopped
- 1/4 cup chickpeas (roasted or simply from the can)
- 1tbs kim chi
- 1 tbs pickled ginger
- 1 radish, finely sliced
- 1/4 cup coriander leaves
- 1tbs soy sauce
- 1tbs yuzu or lemon juice
- 1tbs sriracha
Method
step 1
Create a layer of rice on the bottom of the bowl. Add all the chopped ingredients on top. Mix all the sauce ingredients together and pour over the poké. Either eat as is or mix all the ingredients together for an explosion of flavours.
