Eggy crumpets with caramelised bananas

Sweet, indulgent and oh so delicious
- 2 crumpets
- 1 egg
- 1 tbs milk
- 1 banana
- 1 tbs brown sugar
- a pinch of cinnamon
- 2 tbs butter
- STEP 1Heat 1 tbs butter in a pan over a medium heat. Whisk an egg in a bowl with the milk and salt & pepper. Dip the crumpet into the egg mixture, coating both sides well. Place into the pan and fry until golden brown before flipping. Once both sides are cooked, place on a plate in a warm oven until needed.
- STEP 2Heat 1 tbs butter in a pan over a medium heat. Slice a banana in half length ways and sprinkle with the sugar and cinnamon evenly. Place these in the pan and cook on both sides until caramelised.
- STEP 3To serve, carefully place the banana on the crumpets and drizzle with honey.
