Ingredients
Cake
- 6oz Self Raising Flour
- 1tsp Baking Powder
- 6oz Butter
- 6oz Caster Sugar
- 3 medium eggs
- 2 tbsp Milk
- Finley Grated rind of 2 lemons
Drizzle
- 6oz Self Raising Flour
- 1tsp Baking Powder
- 6oz Butter
- 6oz Caster Sugar
- 3 medium eggs
- 2 tbsp Milk
- Finley Grated rind of 2 lemons
- Juice of 2 lemons
- 4oz Caster Sugur
Method
- STEP 1Sift flour and baking powder into a big bowl
- STEP 2Add all other cake ingredients into bowl and beat until smooth
- STEP 3Pour into a greased/baselined 2lb loaf tin
- STEP 4Bake in preheated oven 180C for 45-1hr
- STEP 5Put lemon juice and sugar in a pan and heat gently until the sugar has dissolved
- STEP 6Drizzle syrup over warm cake so it soaks into the cake
