  • 2 weetabix
  • 113g sultanas
  • 142ml skimmed milk
  • 142ml water
  • 113g self raising flour
  • 1 tsp mixed spice
  • 14g sweetener
  • 1 egg

    Method

    • step 1

      Preheat oven to 180
    • step 2

      Put weetabix and sultanas in a bowl, pour over milk and water and leave to soak up all liquid. Stir in mixed spice, flour, sweetener and beaten egg
    • step 3

      Spoon mixture into lined loaf tin. Bake for 1hour 15 mins
    • step 4

      Let cool then cut into 12 slices.

    i wasnt keen but my husband loved it and took it every day for work, the good thing is it stays moist all week and doesnt dry out
