  • 2 weetabix
  • 113g sultanas
  • 142ml skimmed milk
  • 142ml water
  • 113g self raising flour
  • 1 tsp mixed spice
  • 14g sweetener
  • 1 egg


    1. Preheat oven to 180
    2. Put weetabix and sultanas in a bowl, pour over milk and water and leave to soak up all liquid. Stir in mixed spice, flour, sweetener and beaten egg
    3. Spoon mixture into lined loaf tin. Bake for 1hour 15 mins
    4. Let cool then cut into 12 slices.

i wasnt keen but my husband loved it and took it every day for work, the good thing is it stays moist all week and doesnt dry out
