• 10g fresh chopped parsley
  • 10g fresh chopped coriander
  • 1 clove garlic
  • 1tbsp olive oil
  • 1tbsp red wine vinegar
  • 1/4 tsp dried chilli flakes
  • 1/4 tsp ground cumin
  • 4 steaks
  • 1 400g tin red kidney beans
  • 1 400g tin of three bean salad in water
  • 1 200g tin sweet corn
  • 1 medium avocado
  • 1red onion


  • STEP 1
    Put a large griddle pan on hob to heat up. Make the chimmichuri in the blender, whizz together the parsley coriander, garlic, oil red wine vinegar, chilli flakes and cumin until well mixed.

    Cook steaks on griddle
  • STEP 3
    Meanwhile drain and rinse beans and sweet corn then roughly chop avocado and slice onion. Toss together in a bowl and pour over dressing season and serve alongside steaks
